It's been a while since I've contributed to this blog so thought I better start transferring some of my worthwhile feed (pun intended ) from instagram/facey to the blog!
Here's a lil something I whipped up for lunch today. You could easily experiment with different seeds and even nuts for the crust!
Makes 2 serves
2 Fillets of hoki or white fish of choice
2 Tbsp Pumpkin Seeds
2 Tbsp Sesame Seeds
2 Tbsp Sunflower Seeds
Salt and Pepper
1. Whisk egg in a bowl.
2. Cut fish in to preferred size (upto you on that). 3. Use a mortar and pesto to crush seeds and s&p, or blitz in a blender but leave kinda chunky for more texture and crunch.
4. Dip fish in whisked egg then into seed mix to coat. Place on baking tray lined with baking paper.
5. Fan bake for approx 10-15min at 150degC. Time will depend on size and thickness of fish!
Serve up with some kumara chips and some greens
