My sister came home to visit from 'murrica and left some kale in the fridge. Rather than watch it rot away over the next few days I thought I'd try use it in a salad. I've tried the kale smoothie and kale chips thing and have de-friended all those liers that said it was yummy! Bleh. Anyway. This salad turned out pretty yum.
What you'll need:
Kale (or you could use spinach leaves)
1 large gold kumara
1/4 red onion
4 strips streaky bacon
1 bunch asparagus
2 Tbsp pumpkin seeds
Peel and cube kumara into approx 2cm cubes, drizzle with some oil and season with salt and pepper. Bake for about 20 minutes at 200degC, flipping halfway through. They should be nice and crispy and soft on the inside.
Slice up asparagus into thirds (lengthwise) toss in a lil oil and salt. Place bacon strips on the side and bake these in oven for approx 5-7 mins this should get em nice and crispy. Chop into about 2 cm squares.
Chop up the kale and place in a large salad bowl. Throw in kumara cubes, bacon pieces, asparagus, sliced red onion and pumpkin seeds. Drizzle with a lil olive oil and walaah!
