One of my dishes from my Pink Breakfast over the weekend! Even got the thumbs up from the fussy lil bro!
Throw the following ingredients into a large container mix up and leave in the fridge overnight.
Makes enough for a few mornings/people
2.5 cups wholegrain oats
1 can coconut cream
2 cups coconut water
1/2 cup almond milk
hand full dried pineapple chopped
hand full dried papaya chopped
hand full sunflower seeds
hand full pumpkin seeds
3 Tbs cup chia seed
1/2 Tbs vanilla extract or essence will do the trick
2 tsp cinnamon
1 tsp nutmeg
Dish out into empty jars the next morn, garnish with coconut chips and you've got breaky on the go!
