Ceviche is a raw seafood dish popular in the coastal regions or Latin America or the Pacific Islands where fresh coconut cream is also added. With the weather warming up its a light and refreshing dinner that won't leave you feeling heavy and makes for a great appetiser, starter or side salad.
Feeds 2 as mains or 4 as starters.
1-2 Fresh Snapper Fillets (Approx. 300-400g)
2 Large Limes
1 Red Capsicum
1 Punnet Cherry Tomatoes
1-2 Large Red Chillies
1 Bunch Coriander
Salt & Pepper
1. Dice fish; approx. 1cm or smaller depending on your knife skills.
2. Juice the lime and pour over fish, stir and allow to marinate for at least an hour or over night (the lime will cook the fish)
3. Dice capsicum, cucumber, and carrot, half cherry tomatoes, slice up chillies and roughly chop coriander and mix in with fish.
4. Salt and pepper to taste.
